From the lowlands of Mexico to the modern chocolate shops of Paris, you will explore the history, techniques, flavors, and socioeconomic power of this food of the gods. Learn to recognize what makes “good” chocolate good! You will compare small batch craft chocolate and commercial chocolates, and graduate from CHOCOLATE 101 with maps, tasting guides, a reading list, and tips for finding, selecting, and purchasing really good chocolate.
